Cream of Broccoli Soup With Shrimp

I make this every Christmas Eve.

I followed the recipe except that i used garlic instead of a shallot, because i didn't have any. i also used whole milk instead of cream. i hand blended the brocolli for a smoother soup. i wondered about the combo with the shrimp, but i had the stuff to make it, so i thought i would try it. its good enough to eat! :)

  1. In a large pot, melt butter and saute shallots about 3 minutes.
  2. Add flour and saute about 3 minutes (forms a paste).
  3. Whisk in cream a little at a time to prevent lumps.
  4. Add milk, bouillon cubes and spices.
  5. Add broccoli and shrimp.
  6. Bring to a rolling simmer for 30 minutes.
  7. Remove from heat.
  8. Cool about 15 minutes then place in fridge for at least 3 hours.
  9. Reheat on low 30 minutes prior to serving.
