I made this a little more low fat by using olive oil instead of butter, fat free, low sodium chicken broth, and evaporated skim milk. Still very delish!!!
FABULOUS!! Probably the best soup I have ever made! I omitted the celery simply because I didn't have any, used half & half instead of milk, and added some ground cayene pepper for a little zing. I like my soups a little on the thick side, so I added a tablespoon of corn starch (mixed with a little cold water) at the end. It thickened immediately! I served it with some shredded cheddar cheese on top and the entire family loved it! THANK YOU!
My entire family and all of my guests loved this soup. I must admit that I made a few changes, though, but liked the basic idea. I put the brocoli, onion, and celery in a pot and just covered it with water/chicken stock, the seasoning,I also added a little cumin and cooked it all until it was tender. I then let it cool and processed it all. I then added the butter and I used cream since I am allowed on my Atkins diet and just warmed it. It was delicious. We will be eating this again very soon.
Very easy and tasty, just a little thin for my taste so I thickened it up a bit with flour. I also added some minced garlic, but otherwise used the recipe as is. I will definitely make it again!
I, and many of my guests, liked the flavor of this soup but found it too thin. Like others I added a couple cloves of garlic and some cumin and did not blend some of the chopped, coooked broccoli. If I make it again, though, I would reduce the chicken broth by a couple of cups and add half that amount back with half and half or cream, or make a roux to begin with which I avoided in order to try to keep it gluten free for my guests..
Made this soup today, just adding enough stock to just cover the vegetables. I pureed it, and didn't the milk. Just served with sour cream and some dill, and second bowl with sour cream and lemon zest. Yummy both ways . I also after blending I put back into the pot and added some broccoli tops, and cooked two minutes, just so I had some bigger pieces of broccoli in my soup. I will freeze the remaining into portion sizes, and when reheating I then have the option of adding cream if I desire. Good soup.
The flavor of this soup was very good however; it did not turn out as thick and creamy as I would have liked. My youngest DD is a Cream of Broccoli Soup aficionado and she told me she likes the added vegetables (celery and carrots) but she wished the soup was a bit thicker too.

An Update - been making this since my first review back in 2005 - finally added that Grand Masala and guess what - we loved it - highly recommend this soup with or without!
