Cream of Broccoli Soup

"this is really good! sometimes I like to puree some broccoli and have chunks as well..and use cubed, boiled potatoes instead of shredded..choice is up to you..I also like a little bit of "heat" in the seasoning..so I might add a couple dashes of hot sauce"

directions

  • fry bacon in deep skillet.remove slices, drain and reserve.
  • Add to the bacon fat, onions, potatoes, salt and boiling water.cover and simmer about 15 minutes.
  • Last 5 minutes, add the broccoli that has been pureed with the cup of water in the blender.
  • Melt butter and cook till thickened .add to broccoli mixture and heat.
  • Add pepper and accent.
  • crumble bacon in fine pieces.
  • Can be added to soup or sprinkled on top for garnish.
  • may use 6 medium potatoes for the shredded potatoes --
  • takes about a cup of fresh broccoli.

  1. Oh my!!!! This was yummy!!!!!! I think the recipe is missing a few steps, but we figured it out! The only thing I changed was the amount of broccoli. I used 2 cups fresh (could have added more!) and kept the liquid amount the same. The shredded potatoes were GREAT!!!! I'm getting rid of my old broccoli soup recipe!!! Thanks for the great soup!
     
  2. YUM! this is a great recipe. I needed a cream of broccoli soup for a recipe I was making and I came across this one. I am so glad I did cause it was perfect for recipe#109690. I did scale this down to 4 servings. I used chunks of potatoes instead of shredded as you mentioned in the description you wrote. Also I kind of changed how I prepared this recipe since I was using it in another recipe. I boiled the potatoes in with the water, onions, butter and added 2 chicken bouillon cubes for 10 minutes than added the rest of the ingredients and let simmer another 10 minutes than added to the recipe I was using. I did take out a bowl full and have for a small mid morning breakfast. Thanks so much for sharing this delicious soup! :)

I love cooking, and reading Christian fiction..I have 5 grandchildren..4 boys and 1 spoiled granddaughter...I also have a black cocker spaniel named Tobey..who is very spoiled..Love computer games, cross stitch and reading cookbooks..I was diagnosed with Acute Myeloid Leukemia almost a year ago, on September 26, 2005....was in an out of the hospital for 8 months, doing intensive chemo...I am doing well now, thanks for all the prayers...
