  • Simmer butter, chicken base, salt& pepper,flour and onions until brown, (called a Rue).
  • Add both milks; cook on medium heat.
  • Cook until rich and thickened.
  • Stirring constantly.
  • Add broccoli pieces.
  • Turn heat to low and simmer for 1 hour.
  • Add cheese if you wish, I prefer the cheese some don't.
  • Delicious!

  3. My family liked the soup, but they thought the cream of the soup kind of tasted like white sauce. They do want me to make it again, especially with the cheese in it. Good soup for lunch on a cold day.
     
  4. This is an easy and great soup. I only cooked the onion to translucent (didn't want brown bits in my cream soup) and only simmered it for 40 minutes (broccoli was cooked). I also added 2 cups of medium cheddar cheese at the end. Yes, this is a thick soup, but it is reminscent of soup you get at some of the casual dining chains. This texture is what I expected and would not change it! Delicious reheated too!
     
  5. Very good soup. I followed the directions exactly and the only thing I would change for next time is to add maybe 8-10 tbls of flour rather than 12 because it was too thick for me and I do enjoy thick soups but this was too thick. The overall taste of the soup was great. Thanks for a very good soup recipe.

  1. Simply sublime! I made this as part of Worldwide Recipezaar Day, and it was a hit. I made a non-dairy version, substituting soy milk and margarine for the milk and butter called for in the recipe. The only other change I made was to use one large onion instead of a small one. Delicious!

I made this account back in 2001, when the site was called "Recipezaar". A lot has changed in my life since then. My kids are all grown and I try to eat a low-carb lifestyle now. Some of my older recipes were handed down from my grandmother. I hope you all enjoy them as much as I have. Current recipes that I post will mostly be low carb or keto.
