Cream Fresh Cauliflower Soup

ingredients

• 236.59 ml minced onion
• 9.85 ml butter
• 907.18 g fresh cauliflower
• 946.36 ml chicken broth
• 4.92 ml chicken bouillon granule
• 709.77 ml milk
• 473.18 ml shredded swiss cheese
• 9.85 ml curry powder
• 9.85 ml cornstarch
• 59.14 ml water

directions

1. Saute onion in butter until tender.
2. Break cauliflower into florets.
3. Combine onion, cauliflower, chicken broth and bouillon.
4. Simmer about 10-15 minutes.
5. Return puree to pan and add milk, cheese and curry powder.
6. Combine cornstarch and water.
7. Stir into hot soup and heat slowly until slightly thick.
8. Serve with seasoned croutons.

The curry powder and swiss cheese set this apart from the usual cream of cauliflower soup. I used a mild, sweet curry powder for this. Thanx for a new and different cauliflower soup. I'll be making this again.
