This cream cheese pie in a cookie crust is always a hit. A simple recipe that goes with any kind of topping or tastes great served plain.

I use this recipe and it was delicious. I used a ready made graham cracker pie crust. I did top it with blueberries. It was wonderful.

Directions

  1. Preheat oven to 400 degrees F.
  2. Combine flour and sugar.
  3. Cut in butter with a pastry blender until crumbly.
  4. Add egg yolk and vanilla and mix well.
  5. Push mixture into a glass pie pan and bake about 8 minutes.
  6. Reduce heat to 350 degrees F.
  7. Cream butter; add sugar, cream cheese, eggs (one at a time) and nutmeg.
  8. Mix until smooth.
  9. Put mixture in cookie crust.
  10. Bake for 1 hour (check after 45 minutes) or until pie is light brown.
  11. Cool completely.
