Cream Cheese Frosting

This is a delicious recipe to use with cakes or to use with the Pumpkin Bar recipe I posted.

Ingredients:

Yield: 1 cake

• 1 (8 ounce) package cream cheese , softened
• ¼ cup butter , softened
• 3 cups confectioners' sugar
• 1 teaspoon vanilla

Directions:

1. Beat cream cheese and butter in large mixer bowl at high speed until fluffy, about 1 minute.
2. Beat in Confectioner's sugar, 1 cup at a time (using more or less sugar depending on preferred consistency) , then continue beating until smooth.
3. Beat in vanilla.
4. Chill bowl of frosting in refrigerator, stirring often, until good spreading consistency.
5. Makes about 2 2/3 cups.

I scaled this way down since I only needed a little frosting for my cinnamon rolls I baked using Recipe #96475 for the dough. I only had FF cream cheese in the fridge and if I had to do it again, I would not choose it. The frosting had a great taste, just the texture was slightly gummy. My own fault, not he recipe! It was delicious melted over the hot rolls however... I will definitely keep this one to use again!!!
