Very simple and quick sandwich. Copied from a health food store's cafe. You can use any olives you'd like. My favorite are jalapeno, garlic or sun dried tomato stuffed. You could also combine different types. When I had this sandwich in the cafe, they mixed regular pimento stuffed green olives with black olives.
- 2 slices bread
- 2 tablespoons cream cheese (to taste)
- 10 olives, sliced (to taste)
- salt and pepper
- Spread cream cheese on one slice of bread and top with sliced olives.
- Top with second slice of bread and toast in toaster oven or dry frying pan over medium until warm and toasty.
