- Melt butter in 9 by 13 pan in 425° oven.
- Meanwhile place all ingredients in a blender and blend well.
- Leave pan in oven with butter and pour batter over butter.
- Carefully close oven and cook 15-20 minute.
- Pancake should rise up and get golden brown. When you take it out of the oven it will fall.

This is also a German pancake, or pannekoeken. Love it! I add ham or bacon for a more filling meal to feed the hubby, but me and the kids love it as written with syrup or jam! We also put taco seasoned hamburger in the filling and top like a taco, or top with met, taters, and brown gravy, or put chicken fried steak chunks, hash browns, bacon, and country gravy on top for a stellar breakfast!! If you love eggs you will love this recipe!

If you used only 3 eggs this would almost be 2/3 of the recipe for German Pancakes which is 1 1/2 cups of milk and flour and 4 eggs 2 tlb spoons of sugar and 1/4 cup of butter. I know it by heart because I have made it sooooooooo many times most of the time I don't even really measure because I know what it should feel like when mixing it, which I do with a whisk. Puffs up really high and we top it with more butter, lemon juice and powdered sugar. My family has made this since I was little, it came to us through my fathers BF's wife. I usually zest the lemon than squeeze it into a container with the zest for a more lemony flavor.

I tagged this in 1-2-3 hits because it sounded good. But then I realized that I had made something similar to it before and we didn't like it, so I almost changed my tag. I'm really glad I did not. I'm not sure if the difference was that this is made in the blender (so everything is well mixed) or what, but we enjoyed this. I used whole wheat pastry flour instead of white and skim milk. Very easy to make pancakes and also good reheated with a little vanilla ice cream on top!
