Downsized this recipe for 2 of us. It was a really delicious salad. Served over a bed of lettuce and some of my pickled beets. Perfect amount for lunch portion. Had some marinated cooked chicken left over from my previous meal and it was plenty for this recipe. The only thing I changed was to add yellow peppers and not green (because of preference) Didn't really need garlic powder because of the spices on my cooked chicken already. I had made this the night before so it had time to blend flavors. We really enjoyed this dish and will make again. Made for the Holiday Tag '09. Thanks for sharing WiGal
I usually make this kind of recipe with baked chicken breasts from the day before, but this time around it was a purchased BBQed whole chicken that I deboned, skinned & broke up into managable pieces! And, instead of using pepper & garlic powder, I used some lemon pepper (which has garlic in it)! Also toasted the walnuts before adding them! All that for A VERY TASTY MAIN COURSE SALAD! Oh my this was great. I made it using dried cherries cause that is what I had. Wonderful mix of flavors. LOVED the walnuts. Great texture addition.
Great summer salad. It would taste good with sliced grapes or green/red apples.
This is a good chicken salad to have as a filling lunch. Made a few changes to accomodate for what I had on hand: used sour cream instead of the yogurt and green onion instead of regular. Also did not add the bell pepper. Served this on crusty Italian bread; I made a serving for 3 which gave DH and I a FULL sandwich! Made for Everyday Holiday.
