Wonderful idea to use puff pastry. I had some in the freezer and used it instead of the individual shells. Crawfish tails are $11.00 per pound so I used Crawfish and shrimp. I used oil and butter combo. Did not want to burn my roux. It did not take 1 hour to get the vegetables tender.I used cajun seasdoning instead of cayenne. Great as an appetizer or main dish with a nice salad and garlic bread. :-0
