For Salad
- 10 cups mixed baby greens
- 1⁄2 cup dried cranberries
- 2 granny smith apples, cored and thinly sliced
- 1⁄2 cup coarsely chopped walnuts, toasted

For Dressing
- 1⁄4 cup mayonnaise
- 1⁄4 cup maple syrup
- 4 teaspoons champagne vinegar
- 2 teaspoons sugar
- 1⁄2 cup vegetable oil
- salt and pepper
directions
- Whisk mayo, maple syrup, vinegar and sugar in a bowl to blend. Gradually whisk in oil until mixture thickens slightly. Add salt and pepper to taste. Dressing can be made up to 3 days ahead of time. Cover and refrigerate. Whisk before using. Toss with salad.
