So easy for your Christmas dinner!
- 375 g frozen cranberries
- 1 cup fresh orange juice
- 1 teaspoon finely grated fresh ginger
- 1 teaspoon finely grated orange zest
- 1⁄4 teaspoon cinnamon
- 1⁄2 cup crushed pineapple
- 1⁄2 cup honey
- Put all ingredients in pan together and simmer until mixture is thick and a jam like consistency.
Made this on Christmas Eve for my special addition to Christmas dinner. Well, I had to sample a sip of the liquid once I mixed it all together, then again while it was simmering away. As it heated, the house smelt spectacular...my daughter walked into the kitchen and said "Wow! did you know the house smells like Christmas?!". Once it had jelled I moved it off the heat and let it cool slightly, then I made the mistake of dipping into it. I ate about 1/2 the recipe before I put it in a container for tomorrow. Thank goodness I am the only one in the family who loves cranberry sauce or I would have had to make a second batch. All I can say is "Merry Christmas to me". Wow! This cranberry sauce is absolutely delicious and so easy to make. I used fresh cranberries since they are in season and I cannot wait to serve this for Thanksgiving tomorrow. I can't stop sampling it -- hopefully, I won't have to make another batch because this one has disappeared!!!! I will try to get a pic uploaded on this one. Thanks for the post!
