Cranberry Orange Rice

"This is a good side dish when you're sick of the same old, same old. Be warned, it has a very strong cranberry flavor. If you don't like cranberries you won't like this!"

  • Bring orange juice to a boil on a large saucepan, remove from heat.
  • Stir in rice, cranberries, almonds and parsley.
  • Cover and let stand 10 minutes.
  • Fluff rice with fork before serving.

  1. So easy and good! I left the parsley out for fear my children would run for the hills at "green stuff." It was really excellent with pork chops (#149356) and brussels sprouts. I never use Minute rice but will keep it on hand for this excellent recipe. Thanks!
     
  2. Lovely flavour ! I made this for dinner tonight. Had to improvise a bit as I ran out of dried cranberries so I used raisons; also used fresh squeezed orange juice. In spite of the changes, the rice came out very tasty. I will definitely make this again ! Thanks for a great way to change my bland rice !
     
  3. This dish is GREAT. It can be used for a side dish (warm), a salad (cold) with about a tablespoon of poppyseed dressing, or as a light dessert with a mixture of oj, sugar and a Tablespoon of melted butter as a topping. It was very good and VERY versatile.
