Cranberry-Oat White Surprise Cookies

  • Preheat oven to 350°F.
  • In the bowl of a food processor, pulse the oats until they resemble a coarse flour. Add the flour, baking soda, cinnamon and salt and process until combined. Transfer to a large bowl.
  • Put the beans, butter, brown sugar, egg and vanilla into the food processor and process until smooth.
  • Pour the bean mixture into the oat mixture and stir by hand until almost combined. Stir in the white chocolate chips and cranberries.
  • Drop Tablespoonfuls of dough onto a parchment lined (or non-stick sprayed) cookie sheet and then gently flatten each one with a water-dampened hand.
  • Bake for 14-16 minutes or til golden on the edges and soft in the middle. Transfer to a wire rack to cool.

Hi! I am happily married with two children, 26 and 12. For nearly 10 years when this site was Recipezaar and then Food.com I hosted several different forums. I enjoyed making, creating, reviewing, and photographing recipes, but what I miss the most are the friendships I made here. I was Food Editor for the Mill Creek View Newspaper in Mill Creek, WA. for about 4 years during that time. Currently I am the office manager at a small mental health clinic.
