Cranberry Oat Bran Muffins

I modified an oat bran muffin recipe to give it more flavor and reduce fat and sugar.

  1. Preheat oven to 350 degrees F.
  2. Mix yogurt and baking soda in a measuring cup.
  3. In a large bowl, beat sugar, oil, applesauce, egg, and orange zest.
  4. Stir in bran and vanilla.
  5. In a separate bowl, mix flour, baking powder, and salt.
  6. Alternately add yogurt mixture and flour mixture to the egg mixture.
  7. Fold in cranberries.
  8. Bake at 350 for 35 minutes.
  9. I've also tried replacing 1/4 cup flour with coconut flour, adding 4 Tbs coconut milk to the wet ingredients, and 1/4 cup shredded, unsweetened coconut (eliminate orange zest).
