- 354.88 ml multi-grain flour
- 29.58 ml ground flax seeds
- 118.29 ml sugar
- 12.32 ml baking soda
- 4.92 ml salt
- 78.78 ml fresh squeezed orange juice
- 394.39 ml skim milk
- 29.58 ml orange zest
- 118.29 ml unsweetened applesauce
- 4.92 ml vanilla
- 2 eggs, beaten
- 177.44 ml dried cranberries
- 177.44 ml chopped dates
directions
- Combine dry ingredients in a large bowl.
- In a separate bowl, squeeze juice from orange and combine with enough milk to make 2 cups. Add zest. Mix in applesauce, vanilla, and eggs.
- Add wet ingredients to dry ingredients and mix well.
- Stir in cranberries and dates.
- Divide into muffin tins and bake at 350 degrees F for 18-20 minutes.
