Strange, but really good coleslaw. The sweetness of the cranberries and the robust flavor of the cheese is wonderful together.
- 3⁄4 head cabbage, cut into pieces
- 1 cup gorgonzola or 1 cup blue cheese, crumbled
- 1 cup dried cranberries
- 1⁄2 cup cashews, chopped
- coleslaw dressing (I use Litehouse)
- Chop cabbage into bite size pieces. It is better NOT shredded. Use enough dressing to moisten. Let sit for 1 hour in refrigerator prior to serving.
