Cranberry Chipotle Turkey

"This was in our local newspaper around Christmas time. When we returned home from our two week holiday vacation, my house sitter had this simmering in the crockpot. It is excellent and couldn't be much easier --- like 3 ingredients."

  • In a crock pot or slow cooker, combine cranberry sauce and marinade.
  • Mix well.
  • Add fozen turkey roast (not the gravy mix) with string on.
  • Cook on high for about 2 hours, then reduce to low and cook another 5-8 hours.
  • Remove roast, cut off string and shred.
  • Return to crock pot and mix into sauce.
  • Serve on hamburger buns or rolls.

  3. We loved this! I made this with boneless chicken breasts because they were on sale. These were a nice variation on the barbecue buns, more like a tex-mex flavor, which my family loves. And these could not have been any easier. Will be making these again and again.
     
  4. WOW!! This was FANTASTIC!! I made a few alterations though. I couldn't find the Lawrys so I had to use a mango chipotle seafood marinade, but it still turned out great. Also, I accidently had it on high for about 3 hours, but then turned it to low for another 2 1/2 and it came out moist. Lastly, since I didn't have any buns or rolls, I just pulled it into chunks and served it that way. My kids LOVED this and I had to refrain from eating the whole thing myself. Served it with mashed potatos and carrots for a mini Thanksgiving dinner in September. :) I am definately keeping this! It was so easy and simple, and I was greatly surprised by the outcome. Thank you so much for posting this.
