  • Preheat oven to 350°F.
  • Grease a 9 x 13 inch pan.
  • Beat butter and brown sugar until creamy.
  • Gradually beat in flour, oats, and orange peel until crumbly.
  • Stir in chocolate morsels and cranberries and stir well.
  • Set aside 2 cups of this mixture.
  • Press remaining mixture into the greased pan and bake for 15 minutes.
  • Beat the cream cheese until smooth.
  • Add the condensed milk.
  • After 15 minutes, remove the baking pan and pour the cream cheese mixture over the hot crust.
  • Sprinkle the remaining crumb mixture over the cream cheese mixture.
  • Bake for another 25 minutes.
  • Remove and cool on a wire rack.

When I find a new recipe, I almost always change it to make it lighter, and healthier, without sacrificing taste! I love fish recipes, slow cooker recipes, and Mexican food (of course being from Texas), which is a challenge to make lighter. My all time favorite cookbook is Joy of Cooking. I know it's a boring old classic, but whenever I am stumped for something, it's the first one I turn to. I tend to be a cookbook collector, as I'm sure most of you are, so it's really hard to name just one. I like to think that each one serves its own purpose.
