This was very simple to prepare. The recipe was cut down to two servings. I made sure to buy extra bags of fresh cranberries back in late December and froze them for just these type of recipes. The dessert was baked a full forty five minutes and the apples had a delicious gooey, caramelized sauce on the bottom of the pan. Reviewed for Best of 2010.

Mmmmmmmm this is lovely. I used 4 "average" size Pink Lady apples (unpeeled) and fresh cranberries (that I had thrown in the freezer after buying). I didn't use quite all of the sugar over the fruit - about 1 Tbsp less - and it ended up perfectly tart/sweet for my taste. Everything else was as written. I did have to bake for 15 minutes extra for the apples to get soft and the topping fully browned and crispy. This would be awesome with ice cream (and I rarely eat ice cream). Thanks for sharing!

I still had a partial bag of cranberries in the freezer from last Christmas and thought "what the heck!" and used what was left in the bag to make way for this holiday season which isn't that far away. Anyway, I used Splenda in place of the sugar and Fuji apples. Since I used quite a lot more berries than ask for I increased the Splenda accordingly and ended up with a still pleasantly tart dessert for me. DH put vanilla ice cream on his and dug in, puckered up and grabbed the sugar. Mind you he's a really hard core sweet lover and once he added about 4 TBSP of sugar he too was a happy camper. Who said you can't have it both ways? *wink*
