A better for you version of Amish Cracker Pudding
- 2 eggs, beaten
- 1⁄2 cup Splenda granular, sugar substitute
- 2 cups saltine crumbs, crushed
- 1 cup shredded coconut
- 1 teaspoon vanilla
- 1 quart milk
- Mix all ingredients together in a saucepan until it boils.
- Pour into a bowl.
- It will thicken as it cools, in the refrigerator.
