- 907.18 g fresh baby carrots
- water
- 4.92 ml salt
- 4.92 ml bacon grease
- 59.14 ml brown sugar
- 59.14 ml butter (melted)
- 59.14 ml honey
directions
- Melt bacon grease in boiler.
- Add carrots and enough water to cover the top of carrots.
- Cover with a lid and place on medium heat and bring to a boil.
- Turn heat to low and simmer for 30-45 minutes or until the carrots are tender when pricked with a fork.
- When carrots become tender pour half of the water off.
- Add melted butter,sugar and honey to carrots.
- Place lid on pot and cook until completely tender.

My heavens these were AMAZING! Usually I have bacon grease, this time I was out. Even without the bacon grease these were terrific! Will make next time with the grease. Not that anyone around here needs it, but a dollop of bacon grease in ANY vegetable always makes it that much yummier! Unlike other reviewers, mine did not take on a brown flavor.

Cracker Barrell (for me) ruins so many of their vegetables by adding bacon or ham. A server told me that even the corn bread has "chicken stock". More and more people are becoming vegetarians, and think of the ones that do not eat pork due to their religion, folks from the middle east, Seventh Day Adventist and many others. "Just found out that they put bacon grease on the baby carrots". What is a vegetarian to do...just find another place to eat, I guess. "Wish they would just let veggies, be veggies".

This is an excellent recipe for making carrots. I have always loved the carrots from Cracker Barrel, and this recipe comes pretty close. I reduced the amount of butter a little, and they still tasted wonderful! The recipe doesn't state when to add the salt, but I added mine at the beginning, so the carrots could cook the entire time with it.
