Crabmeat and Corn Soup, Low Fat

- 59.14 ml butter
- 59.14 ml flour
- 473.18 ml skim milk
- 118.29 ml heavy cream
- 340.19 g evaporated skim milk
- 4 ear corn
- 236.59 ml green onion, chopped
- 453.59 g fresh crabmeat
- 2.46 ml white pepper
- 2.46 ml seasoning salt
- 14.79 ml soy sauce
- 59.14 ml fresh parsley, chopped
directions
- Melt butter.
- Add flour and stir gently. Do not let roux darken.
- Add milk, stirring until it begins to simmer.
- Add heavy cream and evaporated milk.
- Add corn and green onion. Cook 3-4 minutes until tender.
- Add crab meat, pepper, salt and soy sauce and simmer until hot. Do not allow to boil.
- Adjust seasonings to taste.
- Garnish with fresh parsley and serve immediately.
