Crab Stuffed Chicken (Aka Fancy Chicken)

"I was searching the internet 2 valentines days ago for a romantic, not too foo-fooey recipe and found this (don't remember what site). This is now my BH's version of comfort food, whenever he feels down he asks me to make "that fancy chicken". I like to serve it with garlic mashed potatoes."

  • Combine cream cheese, crabmeat, and soup mix, set aside.
  • Cut a 'pocket' into the side of each chicken breast (be sure not to cut all the way through!).
  • Fill each pocket with the cream cheese mixture and close the opening with toothpicks.
  • Dip chicken breasts in flour-> Eggs-> Breadcrumbs.
  • In large skillet, melt oil and butter over medium-high heat.
  • Add chicken to skillet, cook for 10 minutes, or till golden brown, turning once.
  • Transfer chicken to 13x9 pan and bake in a 350°F oven, uncovered, for 15 minutes or until chicken is done.

  1. Wow!! The kids all loved it. The high fat content discouraged me at first, so I cut down the crm. cheese, took out the egg yolks and used margarine. This was very flavorful. Thanks!!
     
  2. This was my first experience stuffing chicken and it was SO easy! I will make this again, most def! My husband LOVED this, my brother was very impressed and I was pleased as punch to serve it and eat it! I pounded the chicken breasts flat with a meat mallet and discovered a creative outlet for stress! I also used imitation crabmeat- the results were fabulous!

  5. its funny because I found this recepe on AOL recepes about four years ago and my family begs me for it all the time. Tonight is the first time I have been to this site and low and behold here it is. If you want to spice this up try some shredded pepper jack cheese over the top five minutes before serving. Yum!

  1. This recipe was just okay. If I ever do make this again, I would use only half the package of soup mix or even instead of using the soup mix, I would put in a dry package of Knorr's shrimp newburg to keep with the "seafood" theme. I would also suggest spraying the casserole dish with Pam before placing the chicken in it.
     
  2. Excellent. I used FF cream cheese and 1 can crab drained. Instead of the liptons I used a little garlic powder, parsley, minced onion and a splash of milk. I also pounded the chicken flat, added filling, and breaded using egg whites instead of whole egg. Then just baked without frying chicken 1st. This lowered the fat/calorie count without giving up any flavor! thanks!
     
  3. I was looking for something special to make for my boyfriend and I because we were a little down about having to return to work after the holidays. I came upon this recipe and decided to give it a try. It was excellent. I LOVED it. My boyfriend LOVED it. My mom LOVED it. I used chicken thighs instead of breasts and cut the bone out. I put the stuffing where the bone was and rolled the thigh and secured it with toothpicks. I don't really care for white meat. Other than taking the bones out, the recipe wasn't difficult to make and was really worth the work. I could eat this every week. Definitely a keeper. Thanks for a GREAT recipe.
