- 177.44 ml green onion, with tops (scallion, chopped)
- 9.85 ml garlic (minced)
- 59.16 ml butter
- 44.37 ml all-purpose flour
- 473.18 ml fish stock (NOT FISH SAUCE)
- 236.59 ml heavy cream
- 236.59 ml milk
- 453.59 g crabmeat (backfin or lump, picked free of shells)
- 59.14 ml cream sherry (or a little more)
- 2.46 ml lemon-pepper seasoning
- 2.46 ml salt
- 2.46 ml white pepper
- 236.59 ml freshly grated parmigiano-reggiano cheese
- 118.29 ml fresh chives (chopped)
directions
- Saute chopped green onion and garlic in butter until tender.
- Stir in flour, stirring until well blended.
- Slowly add 2 cups of the fish stock, continuing to cook until smooth and bubbly.
- Slowly add cream and milk.
- Stir in crabmeat. Add sherry, lemon-pepper seasoning, salt and pepper. Simmer until piping hot. Adjust seasoning to taste.
- Serve in bowls topped with cheese and chives.
