Crab and Potato Cakes

"Yummy crab cakes make for a great appetizer"

• Serves: 8

ingredients

• 8 ounces crabmeat
• 1 cup potato, cooked and diced
• 4 green onions, cleaned and thinly sliced
• 1 1⁄2 cups mayonnaise
• salt
• pepper
• 1⁄2 cup breadcrumbs
• 1 teaspoon orange zest
• 1⁄4 cup orange juice concentrate
• 1 teaspoon lemon juice
• 2 tablespoons finely chopped of fresh mint
• 4 tablespoons unsalted butter

directions

1. In a bowl combine the crab, potato, green onions, ½ cup mayo and season.
2. Combine the ingredients and form into 8 patties of equal size.
3. Pour the breadcrumbs on a plate and season.
4. Dredge the patties in breadcrumbs to coat and set aside. The patties can be made several hours in advance to this point and refrigerated.
5. In a bowl combine the remaining 1 cup of mayonnaise, zest, juice concentrate and mint.
6. Season and refrigerate until needed. Can be made several hours in advance of serving.
7. Fry cakes till golden brown.
8. Serve with a dollop of the mayonnaise.
