I found this appetizer recipe in a really cool blog about entertaining and it seemed soooo easy that i had to try it. I like that kind of cooking... super easy and simple but that you can also make it look gourmet. So i finally tried this for my cousin's bday and EVERYBODY loved it. They even asked me to do it again for our next gathering. I'm not sure about the servings, and it also depends on how much avocado and crab meat you put in each tortilla chip, so it's just approx.
1 cup
jumbo
crabmeat
(use as much or little as you would like)
salt and pepper
tortilla chips
(i use the ones made of corn so my celiac mom can enjoy these too, but you can also use toasted pita )
Directions:
1
In one bowl combine the avocados, juice of 2 limes, salt and pepper.Mix this together until it is of chunky consistency.
2
In another bowl combine the crab meat, basil, salt, pepper and the juice of the last lime. Mix together, being careful not to pull apart the meat.
3
Arrange your tortilla chips on a serving platter and place a teaspoonful of the avocado mixture on top of each of them and then 1/2 teaspoon of the crab on top of the avocado. If you have any extra basil you can add a little to the top of the chip. This amounts are up to you actually, but this is what i recommend. So you can try it and put as much or as little of the avocado and crab meat mixtures as you want.
Very nice blend of flavors! Be cautious adding the lime as proper amount can vary depending on size and flavor of avocados and size of limes. I recommend adding 1/2 the suggested lime and then adjust up to taste. Because the lump crabmeat I get at Costco is very salty, I omit the salt from the guacamole completely, and next time will use chips without salt. This would also be a good (and lower fat, lower salt) appetizer on toasted rounds of Italian or French bread.
