Cozy Orzo and White Bean Soup

"I say "cozy" cause this is my favorite comfort soup, it's so rich in flavour you'll want to make it every time it rains!"

  • In a large heavy saucepan, heat the oil over medium heat.
  • Add onion and garlic, sauté for 4 minutes or until onion is soft.
  • Add tomatoes, stock, sun-dried tomatoes and pepper flakes and bring to a boil.
  • Add orzo and simmer about 12 minutes, or until pasta is cooked, stirring often to prevent sticking on the bottom.
  • Add beans and heat through, about 5 minutes.
  • Add salt and pepper to taste.
  • Serve topped with as much parmesan cheese that you like!
  • Now pick a cozy spot on the couch and enjoy!

  1. This recipe is a keeper. It was easy to make and dh really liked it. I used chicken broth and great northern beans as I didn't have what was listed in recipe.

  4. I made this in the pressure cooker, and my only regret is that I didn't double the recipe. This soup is delicious! Sadly, I didn't have any sun-dried tomatoes on hand this time, and I was worried that the soup would lack flavor. I threw in a spoonful of tomato paste and it doesn't seem to have hurt anything. I like a bit of heat, so I added a pinch of Essence of Emeril, for funs!
