This is delicious and very easy to make! I like making this because it's tasty and it makes plenty of leftovers for later in the week. And it's even better heated up a day or two later! Serve with homemade cornbread! Found this recipe in the Texas Country Reported Cookbook, which is one of my favorites! I'm not real sure about the cooking time, but I think it takes about an hour!

Directions

  1. Brown meat in butter.
  2. Transfer to a large stockpot and add remaining ingredients.
  3. Cook until potatoes and carrots are done.

YUM YUM YUM YUM YUM!!!! Can you tell I liked it :) I went snow-skiing with friends a few years back and we all took turns making dinner for the group at night. I was served something so warm and hearty and she called it "cowboy stew". I never got the recipe but always got the craving. But when I looked around for it, it was never exactly how I'd remembered it. This time though, I found a winner! Served it with lots of hot cornbread of course and hot cocoa for dessert on a cold night! I wont lie though, I will eat it in the dead of Summer too :D

This was really delicious. I followed the recipe pretty much as posted except I didn't know what ranch style beans were so I used 2 14oz cans of barbecue style beans (made from white beans and kidney beans). This makes a lot (It filled my dutch oven right to the top) and is even better the next time around. I will definitely be making this again.

My daughter had a cowboy themed birthday party and I made this. I doubled it, I had around 30 guests and they ate it ALL! Really tasty and easy to make.
