Makes 12 soft tacos. For the corn salsa use either store bought or make your own similar to Mexicali Corn Relish.

This was good! I made a few changes, of course! I used 1 tsp chili powder and 2 tsp taco seasoning mix, plus a whole large onion and no peppers (personal taste on that one). Next time, I will cook the onions first, as the meat was chewy and overdone by the time the onions were caramelized. Note: Brown the meat in a LARGE pan or do in 2 batches!

  1. Season strips of steak with salt and set aside.
  2. In a small bowl, make a sauce by whisking together coffee, ketchup, and chili powder.
  3. Heat a large skillet over medium high heat and cook the beef in vegetable oil to brown, about 2 or 3 minutes.
  4. Add sauce, onions, and red pepper; cook until vegetables are tender and sauce thickens, about 6 to 8 minutes.
  5. Meanwhile, wrap tortillas in paper towels and heat in microwave for 30 seconds.
  6. To serve, spoon steak and vegetables mixture into tortilla, top with corn relish, and garnish with fresh, chopped cilantro.
