Cowboy Cookies: A Judy & Paige Presentation

"These are the beef jerky of the enlightend cowboy in the modern desert." So says my fiancee. These cookies were created by his mum Judy, carried on by his sister Paige, and is now a tradition I'm proud to share."

  • Preheat oven to 350-degrees.
  • Melt butter and mix, in large bowl, with both sugars.
  • Add vanilla and eggs.
  • Add all dry ingredients except last two, blending thoroughly.
  • Add chocolate chips and oatmeal, mixing well.
  • Drop by rounded spoonfulls onto cookie sheet.
  • Bake 10- 12 minutes, until cookies just begin to turn golden brown.
  • Cool, or eat'em straight from the oven!

  1. I added a touch of maple extract, these cookies rocked! Used a cookie scoop--they were bakery perfect. Can put many on the sheet as they do not spread that much.
     
  2. My friend's grandmom also "created" these cookies, which I love, but I lost the recipe over the years. The only difference is her recipe called for wesson vegetable oil in place of the butter. Every time I made these, people always went wild. Great cookies. Thanks for posting.
     
  3. I just made a variation of these that, my fianee informed me, 'rock'. I made half of the recipe normally. To the other half, I added the following crazy mix: -1/4 bag melted Ghiradelli double chocolate chips -1/2 small bag coconut -1/2 teaspoon cinnamon -a wee bit of freshly grated nutmeg I have to admit. They didn't taste too terrible. And I'm sure they were very low in fat and calories. ;)
