We like to eat this in tortillas with sour cream and salsa. I usually use a whole pkg of hash browns, and 2 eggs per person.
We went on vacation, and I thought I'd take a few recipes to try.I'm glad I took this one.I cooked this outdoors, over an open pit.This was really good and easy to make.I added salsa at the end. I'll use this recipe again. THANKS
My hubby was in charge of this the first time we had it. He drained the grease off the sausage, and it made the entire thing too dry. We melted some butter over it to make it edible. The potatoes browned up nicely, the way we liked them, though. The second time we did not drain the grease. I cooked my potatoes in the oven for just a few minutes to get them browned. That's just my personal preference. We loved this the second time and will make it more often.
I made this on a camping trip, I used half sausage and half bacon. I also added more eggs because there were six of us, everyone loved it and it will be one of my regular breakfasts for camping from now on.
This wasn't my cup of tea, but my husband loved it. I am not too big on any kind of sausage (just don't care for it) but aside from that, I thought the hash browns turned to mush and ended up being the consistancy of mashed potatoes (from all the stirring, I suppose). We are going to give this one another shot, however, and try a bit of modification to our tastes. But overall it was good.
My 5 kids and Hubby LOVED this recipe. My kids will only eat eggs like this now! Thanks for the simple, delicious recipe.
Funny how great minds think alike. I've been making this for years and years. It's a super easy breakfast. Sometimes I skip the meat, saute some chopped onion, peppers or even mushrooms then add the hashbrowns. Next time I'm going to do what one of the other reviewers suggested and serve it in a flour tortilla.
