Cowboy Beans

"I came up with this recipe when my children were toddlers and they refused to eat green beans, when they asked me what it was I said " they cowboy beans" all cowboys eat them because they make them big and strong. Now 25 years later they still on our menu."

  • Slice the green beans, peel the baby potatoes and the pickling onions.
  • Dice the bacon and grate the cheese.
  • In a pot fry bacon and garlic until cooked but not crispy add crushed garlic, lemon pepper, aroma seasoning, mixed herbs and salt fry for another two minutes.
  • Add the green beans, baby potatoes, pickling onions and water.
  • Cook until soft and all liquid has been absorbed add more water during cooking if necessary.
  • When all the water has been absorbed and the beans, onions and potatoes are soft add the creme fraiche and cheese mix well heat through and serve.
