Couscous With Pistachios

This came from the Everyday Cooking magazine. Makes a quick and yummy side dish!!

  1. In a medium saucepan with a lid, heat oil over medium. Add white part of scallion; season with salt and pepper, and cook until soft, 1 minute.
  2. Add 1 cup water; bring to a boil. Add couscous, remove from heat, cover, and let stand for at least 5 minutes. Add pistachios and remaining scallion. Season with salt and pepper; fluff with a fork, and serve.

This was so delicious! I made it for dinner with a roast pork loin with cranberry/orange glaze, so I added some dried cranberries and a small amount of mandarin orange segments to the couscous at the same time as the pistachios. Yum!! My husband and I loved it. Will definitely be making this again!
