  • Heat the chicken stock to boiling. Pour over couscous and let sit, covered, for 10 minutes. Fluff with a fork.
  • Add lemon juice, oil, salt and pepper; mix well. Let cool, covered, for 1 hour.
  • Add remaining ingredients and mix well.
  • Season to taste.
