  • Heat butter; add garam masala, bay leaf, and onion.
  • Cook until golden brown. Take out some onion for garnish.
  • Add the drained chickpeas, garlic, ginger, and olive oil.
  • Fry for 4 minutes.
  • Add couscous and stir-fry.
  • Add chicken broth.
  • Let the couscous boil until the liquid reduces.
  • Cover and simmer on low heat for 10 minutes.
  • Remove from heat let stand 5 minutes.
  • Fluff with fork.
  • Garnish with chopped coriander and reserved fried onions.
