  • Dissolve chicken bouillon cubes in 2 ½ cups water in large saucepan.
  • Bring to a boil; add carrots and onion.
  • Cover and reduce heat to low.
  • Boil 15 minutes or until carrots are done.
  • Add salt, pepper, and couscous.
  • Cook, uncovered, 1 minute.
  • Add butter.
  • Cook and stir 2 minutes.
  • Cover and let stand 10 minutes.
  • Stir and serve.

  1. I used some red onion, some green onion, about half an orange pepper, 3 C chicken broth, 1 1/2 C couscous and no butter. I sauteed the vegetables in a little olive oil first and then added the chicken broth and the rest of the ingredients. So, it was quicker. It turned out very well. The amount of liquid to couscous was just right. I served it with chicken. :)
     
  2. Perfect side for a spicy fish dish. I liked that it wasn't as dry as couscous usually turns out. I diced some baby carrots to use in it. Your favorite herbs could be added if you wanted a bit more flavor.

  4. This works well as a side with a strong or spicy entree to offset it since this is a mild couscous. It is very easy to prepare and I always have onions and carrrots around. I made as directed but you can add a lot to it if you want to spice it up. Thanks for posting!
     
  5. I would give this four stars because it was good but it didn't "wow" me; however, I have to give it 5 stars because EVERYONE ate it and loved it (DH, 5 yr old, 3 yr old, and 1 yr old)!! I used the recipe as a rough guide--and I used up everything in my fridge, which was half an onion, 2 carrots, and half a green bell pepper. I needed it done quickly, so I sauteed the veggies in olive oil until softened but not brown, added the boiling chicken broth, and followed the rest as is. I used tri-color couscous and it just happened to be very color-coordinated as well!! Was a great side to our barbequed chicken--thanks!!
