I work in an oatmill and am sick of oat porridge. Couscous is a great change and has a wonderful mouth feel when combined with whole flaxseeds - pops in your mouth.
- 1⁄2 cup couscous
- 3⁄4 cup milk (trim or whole)
- 1 teaspoon raw sugar
- 2 tablespoons raisins
- 1⁄2 teaspoon cinnamon
- 2 tablespoons flax seeds
- Mix all ingredients together in bowl. and microwave for 2mins on high. Stir and further cook if required.
I have taken to having this for breakfast lately, but I make it without sugar and with water mainly with a bit of soya milk. Its very tasty though, and, with the flax seeds, nutritious!
This was quite nice for something different, I originally made this for my 1 year old for breakfast but unfortunately he wasn't very taken with the texture, I even tried mixing it with weetbix but he still only had a few mouthfuls before spitting it out and I also found he didn't absorb the flax whole as they came through his nappy....I on the other hand enjoyed this mixed with a little vanilla yoghurt for something a bit different for breakfast.
