A light and aromatic side dish, ideal with lentils or fish.

  1. Heat oil in a pan and add zucchini tossing to coat.
  2. Add vinegar, mix well cover and cook for five minutes until the courgettes are tender crisp.
  3. Remove lid and cook for another 2 - 3 minutes until liquid has evaporated
  4. Remove from heat and capers, parsley and lemon juice.
  5. Toss to coat and season if desired, serve warm.

Good, I had never had capers with zucchini alone and it was pretty good! I did add a little salt and pepper to finish. Thanks!!
