  1. place garlic vinegar, olive oil in a bowl.
  2. season with salt and pepper, whisk together for about a minute.
  3. peel and slice potatoes thick, place in mixing bowl.
  4. add remaining salad ingredients, and toss.
  5. pour vinaigrette and toss again.
  6. season again if needed, and marinate 15 minutes before serving.
