"This is my old roommates recipe - we used to fix this all the time. It's a tasty, one dish dinner. The "crust" is a "meatloaf" mixture."

  • Crust: Combine ground beef, 1/2 a can of tomato sauce, bread crumbs, onion, green pepper & spices.
  • Pat mixture down & up sides of a 9 inch pie plate (I use a deep dish).
  • Set aside.
  • Filling: Combine rice, all the remaining tomato sauce (1 1/2 cans), 1 cup water & 1/2 cup of cheese.
  • Pour on top of crust.
  • Cover with foil and bake at 350 for 25 minutes.
  • Sprinkle with rest of cheese & bake 10 -15 more minutes or.
  • until cheese is melted.

  1. The ingredients section lists a total of 2 1/2 cups of water; however, in the instructions, only one cup of water is accounted for, when combining the rice and tomato sauce. What is the amount of water that should be used in this recipe?

This is an old old recipe, My grandmother use to make this back in the late 40's early 50's , My Mom use to fix this when I was growing up in the 60's and 70's, I fix it for my family and now my Daughter makes it for her fiance. obviously it's a family favorite. The only thing different from this recipe posted here is that my grandma's recipe called for oatmeal in place of breadcrumbs.
     
  2. Very good recipe when prepared as written. I have also made this by adding a pouch of taco seasoning to the meat mixture and substituting a can of tomato sauce with a undrained can of Rotel tomatos and chilis. Very good either way!

  4. We did not really care for this dish. There were just too many different flavors going on all at once for us. I don't have a deep dish pie plate and I think that is definately a necessity for this recipe as mine was oozing out and making a mess in the oven. Also, the recipe doesn't specify but I would suggest using very lean ground beef because I used the 85/15 and mine was still quite greasy. Thanks for sharing!
     
  5. We love this, mostly for sentimental reasons, since my MIL has been making it for ages...but also because it's hearty and delicious. You can jazz up the ground beef mixture with fresh herbs and whatever strikes your fancy to make it a little spicier. Using lean ground beef is a must -- and even then you may have to tilt the pie plate to drain off a bit of fat, but this isn't too hard to do. This meal is always well received and kids go for it. Great with salad and bread. An oldie but goodie in our family!
