I believe I found this recipe in one of my mother's old cookbooks as a teenager and made them so much that I practically memorized the recipe. It's one of my and my family's favorites. This is not your typical brownie. It's a different take on a blonde brownie--with gooey chocolate chips, crunchy walnuts and chewy coconut. They're best described as a sinfully rich chocolate delight.

  1. Preheat oven to 350°F.
  2. Combine butter, sugar, egg, salt, baking powder and vanilla.
  3. Gradually stir in flour (batter will be quite thick).
  4. Fold in coconut, chocolate chips and walnuts one at a time.
  5. Spread batter into a greased 9-inch brownie pan.
  6. Bake for 25-30 minutes or until done.
  7. Cool on a wire rack for 30 minutes.
  8. Cut into squares and serve warm.

This recipe was made on 10/5/10 for the " October Is Dessert Month Event ". I did something to this recipe that I hardly ever do, it was made as written. ;). I did have to bake this about 10 minutes longer than what is written( my oven runs really odd ). The taste of this wonderful creation is a cross between a sinfully rich cookie and a decadent brownie. WOWSER! :) These are very rich blond brownies, loaded with semi-sweet chocolate chips, walnuts and coconut! I melted the butter and brown sugar together over low heat, mainly because my brown sugar had almost turned to stone! :) I used hazelnut extract and toasted 3/4 cup walnuts in a hot iron skillet before chopping them ~ Made for Andi's May 2010 Farm Cooking event in the Photo Forum!
