  • Preheat oven to 350 degrees F.
  • Melt butted in a 10-inch oven-proof skillet.
  • Add potatoes and onions and cook, covered over medium heat about 15 minutes until tender and lightly browned, stirring occasionally.
  • Beat together eggs, salt, pepper, and milk; stir in 3 Tbs parsley and 1/2 cup cheese.
  • Pour egg mixture over potatoes; sprinkle with ham.
  • Bake for 20 minutes or until eggs are set.
  • Sprinkle remaining 1/2 cup cheese over eggs; return to oven for about 2 minutes until cheese is melted.
  • Remove from oven and garnish with parsley.
  • Cut into wedges to serve.

  1. Yum! I used all the indicated ingredients but just used whatever cheese I had on hand (tex mex and cheddar) and dried parsley. The kids loved it, the adults enjoyed it too. Quick and easy, but we had to cook longer as we didn't have an oven safe pot so had to transfer. Cooked an extra 10-15 minutes that way to firm up the egg. Will definitely add this into the rotation!
     
  2. We loved having breakfast for dinner !! This is a marvellous and easy dish. I finely diced potatoes as hash browns are hard to find here. Along with the bacon I added some finely chopped camembert cheese for a more dinnertime flavour. We all had 2 serves !!

  5. Great breakfast! I made half a recipe for the two of us and we still have some leftover. I used fontina cheese and I cooked it 10 min. then added the second amount of cheese. Served with toast and fresh fruit.

I am also&nbsp;married to my best friend, Jeff and have been since April 2005.&nbsp; I love cooking, hate cleaning and will do whatever I can to get out of it!&nbsp;&nbsp;I&nbsp;love grilling and baking.&nbsp;&nbsp;I do most of the grilling at my house, and bake for almost a week straight at Christmas time!&nbsp; I can make or will attempt just about anything,&nbsp;though I rarely make&nbsp;brownies, my husband's are the best!&nbsp; Homemade breads are not my friend, so I am always working on bread baking.</strong></span></p> <p><span><strong>As for recipe ideas (besides zaar) Cooking Light Cookbooks are my favorites.&nbsp; I love to make new meals and try new things; it is hard though because my husband is picky when it comes to veggies (and hates seafood); If it were up to him we would have baked-bread crumb chicken and white rice at least one meal a day!&nbsp; Over the past couple years with zaar, I have found tons of new recipes&nbsp;my family&nbsp;normally wouldn&rsquo;t eat&nbsp;but have been happily surprised with new favorites.</strong></span></p> <p><span><strong>I&nbsp;love to join in&nbsp;all of the tag games; I haven't been as present as I would like, but as soon as my Jeff is back from working in Ohio I will be back in full tagging mode! </strong></span></p> <p><span><strong>Cooking is my hobby and passion, I always like to host the family get togethers and volunteer for the potluck dishes.&nbsp; Most of all though&nbsp;are my kids; being home all day with them is fun and challenging, but I wouldn&rsquo;t trade it for any salary!!</strong></span></p>
