Country Chicken & Biscuits

"We've made this dish time and time again. The biscuits just about double in size when baked, and the French Fried Onions give them a wonderful flavor. For the mixed veggies I use the one that has corn, green beans, carrots, and peas... and it makes the dish very colorful as well as tasty!"

  • 8 slice bacon (cooked and broken into bite size pieces)
  • 4 chicken breasts (cut into bite size pieces)
  • 283.49 g frozen mixed vegetables (defrosted)
  • 236.59 ml tomatoes (chopped)
  • 354.88 ml cheddar cheese (shredded)
  • 297.66 g cream of chicken soup
  • 177.44 ml milk, plus
  • 157.80 ml milk
  • 354.88 ml biscuit mix
  • 85.04 g French-fried onions

directions

  • Pre-heat oven to 400 degrees.
  • In greased 12x8 baking dish, layer the bacon, chicken, vegetables, tomatoes, and then 1 cup of cheese.
  • Blend the soup and 3/4 cup milk with 1/2 of the French fried onions. Pour over the casserole, cover with foil and bake for 15 minutes.
  • While the casserole is baking, combine the biscuit mix, 2/3 cup milk, and the remaining french fried onions - mix thoroughly.
  • Drop the biscuit dough on top of the casserole by the spoonfuls to form 6 biscuits around the edge. Sprinkle with remaining cheese.
  • Return to the oven and bake uncovered for 15 - 20 minutes, or until biscuits are golden brown.

  1. Very good. I did double the soup/milk and made extra biscuits for the top which I'm glad I did. Added some sauteed mushrooms which I needed to use up and added 1 potato, cubed and cooked before adding. I also precooked the veggies for about 5 minutes in boiling water because I was afraid they would not get done. I absolutely loved the addition of the French-fried onions. The ingredients are very versatile in this recipe, but don't omit the French-fried onions. I'll be making this one again. Thanks for sharing. Made for PAC Fall 2009 :)

He loves being in the kitchen as much as I do! :) He is a huge fan of all things dairy. You can not open a bag or container of cheese, yogurt, sour cream...or well, really anything dairy without him promptly being under foot! He is also a firm believer in the 5 second rule, and I'm okay with that. ;) I only like to review the recipes that we truly enjoyed! Sure, I've had my share of duds ... but just because I don't like it doesn't mean someone else might enjoy the heck out of it! So, I choose not to leave bad reviews that may sway someone else from trying a recipe. One of my peeves are the reviews that say something along the lines of... I changed this, I changed that, and your recipe was just awful! I may make changes to the recipe (usually not more than full fat to low fat / no fat ingredients - with an exception to sweets, then it's dump in the butter and pour in the sugar missy!), but I feel no need to point that out in my review.
