Now this is the recipe I grew up with. I am a Georgia girl and we called it a Pea Pickin' Cake. We called it that because it was the perfect, light cake to have after a hot day in the sun pickin peas. :) Unlike most cakes, this one doesnt sink to the bottom of your gut with a huge thump. :) I am not a big cake eater though the rest of the family adores them. However, this is the cake I am making today for my birthday because it is one cake I absolutely love!
I substituted the 11 ounce can of mandarin oranges for the 1 cup of water in a carrot cake mix. It turned out delicious and moist. (The box called for three eggs, so that is what I used.). Thank you for giving me the courage to try this! NOTE: I did not make the frosting.

This cake was exactly what I thought it would be, not extremely rich, but very light, cool and refreshing. I just iced the top of each layer, it looked so pretty.
i always knew this cake as mandarin orange cake, no fancy name, no fancy preparation, but the end result is incredible!!! i use coconut cream instant pudding in the icing, instead of vanilla(when i can find it here), haven't even thought of the cake in years, but now will be making it for July 4th BBQ. thanks for posting Luvin'Texas from mandabears, aka hating central Florida.
