My friend, Fran gave me this recipe and it is delicious. you can reduce the fat by using low or no fat sour cream and cheddar cheese. You can also eliminate the margarine and you can also use Pam to grease your pan.

  1. Boil potatoes.
  2. Peel and grate potatoes.
  3. Preheat oven to 350 degrees.
  4. Grease a 9x13 inch pan.
  5. Layer ingredients in this order.
  6. 1/2 of grated potates.
  7. 1 cup sour cream.
  8. 1 cup cheddar cheese.
  9. 1/4 teaspoon salt.
  10. 1/4 teaspoon pepper.
  11. Repeat layers once more.
  12. Drizzle 1/4 cup margarine over top.
  13. Bake at 350 degrees for 45 minute.
  14. or until hot.

Absolutely fabulous recipe. I used it for my low residue diet. The only thing I would change is perhaps adding a bit of seasoning. Can't wait to make it again :)

This is a wonderful potato dish! The flavor of the potatoes is outstanding and everyone enjoyed it. I put it all together earlier in the day and then baked it for about an hour. Easy as can be. Thanks for sharing this, Jane from Ohio.
