Cottage Cheese Veggie Pilaf

- 600 g basmati rice
- 200 g mixed vegetables
- 200 g cottage cheese (paneer)
- 1⁄4 cup oil
- 2 medium onions, sliced
- 2 medium tomatoes, chopped
- 1⁄4 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- 1⁄2 teaspoon saffron
- 1⁄2 teaspoon yellow food coloring
- 1⁄2 cup warm milk
- 1⁄2 cup fresh coriander leaves, chopped
- 1⁄2 cup crisp fried onions

To be ground into a paste
- 2 green chilies
- 1⁄2 cup crisp fried onions
- 1 tablespoon garlic paste
- 1 tablespoon ginger paste
- 1⁄2 teaspoon black peppercorns
- 4 cloves
- 1 inch cinnamon
- 1 teaspoon cumin seed
directions
- Boil the mixed vegetables in 1 cup of warm water for 5 minutes.
- Pour oil in a heavy bottomed pan.
- Add onions and saute until browned.
- Add tomatoes and cook until soft.
- Add this to the ground masala paste, the powdered masalas and salt.
- Cook for 5 minutes.
- Add the boiled veggies and cottage cheese.
- Cook on simmer until the oil separates.
- Mix the chopped corriander into the veggies.
- Parboil the soaked rice in lots of water with salt.
- Strain rice and lay it on top of the cooked veggies.
- Mix the saffron and food colour in milk.
- Splash this saffron milk on the rice.
- Sprinkle crisp onion on the last layer.
- Close the pan with a lid tightly.
- Cook on simmer for 25 minutes.
- Serve this pilaf with a salad of your choice!
