This is a variation on "Lime Jello Marshmallow Cottage Cheese Surprise" but much more low-calorie and a good alternative to the ricotta salads offered in South Beach - Phase 1 - and it contains no fruit.
- 1 (8 1/2 g) box sugar-free gelatin mix (your choice of flavor)
- 12 ounces fat-free cottage cheese (small or large curd)
- 12 ounces sugar-free Cool Whip (it is low fat)
- 3⁄4 cup nuts
- Stir the jello into the cottage cheese thoroughly.
- Fold in the Cool Whip.
- Stir in the nuts.

This was so good it was hard not to eat the whole thing at a sitting. I actually diivided it into 2 so I wouldn't be a little piglet. I used raspberry sf jello & made according to the package instructions w/ ice & when partially thickened, I stirred in the cottage cheese and coolwhip. I used sliced almonds as the nuts but when I make it again, I am going to just sprinkle some in. Initially I liked the crunch they added but later wished they were not there. Definitely a keeper!
Great use of cottage cheese for someone who doesn't like cottage cheese!
