Cottage-Cheese Stuffed Tomatoes

A light and healthy appetizer. Can be made a day in advance. Easy to bring for a picnic.

  1. Cut ends of tomatoes and remove insides. Dust with freshly cracked pepper.
  2. Mince chervil. Mix with cottage cheese, cocktail sauce. Stuff tomatoes with the mixture. Keep refrigerated until use. Serve garnished with sprigs of chervil.

ABSOLUTELY GREAT little tasties, these, & I particularly enjoyed the slight hint of anise! I used a package of Campari fresh tomatoes & liked working with more than I would have the cherry tomatoes (been there, done that)! Actually made these as a side for supper, but another time I'd really enjoy making these as appetizers & including them on my finger food counter! Thanks for sharing the recipe!
